Cashew Milk Recipe

Cover the cashews with filtered water and soak for at least 2 to 3 hours. Drain the cashews and place in a high-speed blender with the the 2 cups of water and raw honey. Process until smooth.
Follow the above Cashew Milk recipe except this time, substitute 3 to 4 dates for the honey and reduce the water to about ¾ of a cup. Blend. Serve as a topping for fresh berries or double this and use in the following recipe.
Banana Cream Pie
For the crust:
1 cup of almonds or hazelnuts soaked for at least 4 hours
A pinch of real salt
1/8 cup of olive or flaxseed oil
For the filling:
Cashew sauce (recipe above) doubled
A sprinkle of raw cacao or carob powder
A sprinkle of cinnamon
Place the crust ingredients in a blender and blend until fine. Press into a pie plate. Slice the banana into the crust. Pour the cashew sauce over the sliced banana, covering the slices completely then sprinkle the carob powder and cinnamon over the top. Refrigerate for about 1 hour before serving.
