Raw Comfort Food Recipes July 18, 2012 |
, I just got an e-mail for the raw food guru Nomi Shannon. She is the author of some good raw "cookbooks". In her latest e-mail to me she shared two excellent recipes that I liked so much that I thought I just HAD to share them with you! They both are adapted from her excellent book "Raw Food Celebrations". This recipe for raw "mashed potatoes and "gravy" are truly the raw (and totally healthy) answer to traditional comfort food. I hope you enjoy them. You can try these recipe now and then when Thanksgiving comes around you can easily start a new tradition with a raw holiday meal! "Mashed Potatoes" 1 1/2 Cup raw cashews, soaked for 20 minutes 1 medium cauliflower head chopped (about 6 cups) 1/2 cup fresh lemon OR celery juice 2 Tablespoon olive oil or flaxseed oil 1/2 teaspoon sea salt Drain and rinse the cashews. Place then in a blend with the cauliflower, half of the lemon or celery juice, the oil and salt. Blend until totally smooth adding more juice as needed. "Mushroom Gravy" 2 1/2 cups mushrooms 1/2 cup water 1/4 cup raw almond butter 1 Tablespoon minced onion 2 teaspoons raw soy sauce pinch of sea salt Blend until smooth.
