Raw Gazpacho Soup



Personally, I found this recipe to be the most delicious Raw Gazpacho Soup recipes I have ever tasted! 

Ingredients:

3 red, ripe tomatoes
½ an onion
1 cucumber, peeled
2 cloves of garlic
1 bell pepper
1 bunch of parsley (stems removed)
1 tablespoon of olive oil
2 tablespoons of fresh lime juice
½ teaspoon of sea salt
½ teaspoon of pepper
¼ cup of pure water
2 Tablespoons raw honey (or agave syrup)

Directions:

Pulse in a blender until partially blended.  Chill well before serving since this will also allow the flavors to blend.  Garnish with chopped avocado and/or more fresh parsley.

This recipe has four superfood ingredients, making it one nutritious soup!

Parsley-An appetite enhancer, cancer fighter, major souce of vitamins, protein, and minerals, sweetens the breathe, great for your eyes, and helps you to lose weight by breaking down stored fat.

Tomato-Tomatoes are high in vitamins A, B6 (thiamine), C, E and K. The minerals that compose tomato nutrients are calcium, iron, phosphorus and potassium and they do not stop there. Perhaps the most well known of nutrients is the antioxidant lycopene. The red hue is due to the presence of lycopene. This plant chemical is a powerful antioxidant.

Honey-Honey is a natural antioxidant and as such can boost your immune system. Generally, it is believed that dark honey varieties contain more antioxidant power than lighter honeys.  A honey with one of the highest amounts of antioxidants is Manuka Honey.  It is produced from flowers native to Australia and New Zealand.

Sea Salt-Natural, unrefined and unprocessed salt from the sea is a nutritious food. Some of the many minerals that compose sea salt nutrition are magnesium, manganese, boron, copper, silicon, iron and nickel. It also has all the trace mineral elements that are naturally found in our blood.
